Winemaking Considerations
The fruit for this wine comes from our Templars Hill Vineyard. The fruit was harvested on the 7th of April in excellent condition. There was a good spectrum of flavours present in the fruit, which is what we look for from Sauvignon Blanc at harvest. The fruit was at 23.5o Brix, 3.2 pH and with an acidity of 8gL-1. The fruit was reductively handled during processing, racked clean and fermented cool in Stainless steel. These practices were all used to try to retain the natural varietal fruit spectrum and concentration of Sauvignon Blanc| Alc. 14% | T/A 7.5 gL-1 | pH 3.35 | Residual Sugar 5 gL-1 |
